Classic Croque Monsieur

- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 0.75 cups whole milk
- 0.25 tsp nutmeg
- 4 slices sourdough bread
- 4 slices deli ham
- 1 cups gruyère cheese, shredded
- 1 tsp dijon mustard

Preheat your oven to 400°F (200°C).

In a small saucepan, melt 1 tablespoon of butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk until smooth and simmer until thickened. Season with salt, pepper, and nutmeg.

Toast the bread slices lightly in a toaster or oven.

Spread a thin layer of Dijon mustard on each slice of bread. Place two slices of ham on two of the bread slices, followed by half of the shredded Gruyère. Top with the remaining bread slices.

Spread the Béchamel sauce generously over the tops of the sandwiches and sprinkle with the remaining Gruyère cheese.

Place on a baking sheet and bake for 8-10 minutes, then broil for 1-2 minutes until the cheese is bubbling and golden brown.
