  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • flatbread or pita
  • chilli sauce
  • garlic sauce
  • lettuce
  • red onion
  • cucumber

    Prepare the meat base by peeling and grating the onion into a fine puree, then transferring it to a food processor or blender.

    Incorporate the mince, yogurt, olive oil, and the full array of seasonings into the processor. Pulse or blend until the mixture is thoroughly emulsified and uniform.

    Divide the seasoned meat mixture into two equal portions. Place one portion onto a sheet of baking paper, cover with a second sheet, and press down firmly. Use a rolling pin to flatten the meat into a thin, even layer.
