Ingredients

  • 500 g fresh okra
  • 0.5 cup flour
  • 0.5 cup olive oil for frying
  • 2 tbsp red wine vinegar
  • 1 tsp sea salt
  • 0.5 tsp dried oregano

Method

  1. 1

Wash the okra thoroughly and pat them completely dry with paper towels to ensure they get crispy. Trim the stems, but be careful not to cut into the pod.

  2. 2

Place the okra in a bowl and toss with the flour until lightly coated. Shake off any excess flour.

  3. 3

Heat the olive oil in a large skillet over medium-high heat.

  4. 4

Add the okra in batches to the pan, ensuring not to overcrowd. Fry for 5-7 minutes, turning occasionally until golden brown and crispy.

  5. 5

Remove the okra with a slotted spoon and drain on paper towels.

  6. 6

Immediately drizzle with red wine vinegar while hot, and sprinkle with sea salt and dried oregano before serving.
