Ingredients
- 4 potatoes cut into ½ inch cubes
- 0.25 cup olive oil
- 4 eggs
- salt
- pepper
Method

Peel and cut the potatoes into very small cubes.

Fry them in hot olive oil until they are cooked.

Remove the potatoes and empty the hot olive oil in a metallic bowl.

Return the potatoes back in the frying pan with 1 tablespoon of the hot olive oil and add 4 eggs.

Season with salt and pepper and mix until the eggs are cooked.
